3 Course Dinner Date to Die For

Here’s a delicious and healthy 3-course meal for Valentine’s Day that you can enjoy with your loved one:

Starter: Watermelon & Feta Salad Ingredients:

  • 4 cups of watermelon, cut into bite-sized pieces
  • 1 cup of crumbled feta cheese
  • 1/2 cup of fresh mint leaves, chopped
  • 2 tbsp of freshly squeezed lime juice
  • 1 tsp of honey
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, mix the watermelon, feta cheese, and mint leaves.
  2. In a small bowl, whisk together the lime juice, honey, salt, and pepper.
  3. Drizzle the dressing over the watermelon mixture and toss gently to combine.
  4. Serve chilled.

Main Course: Grilled Salmon with Avocado Salsa Ingredients:

  • 4 salmon fillets (170g each)
  • 2 ripe avocados, pitted and diced
  • 1/2 red onion, chopped
  • 1 large tomato, chopped
  • 1 jalapeño pepper, seeded and minced
  • 2 tbsp of freshly squeezed lime juice
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions:

  1. Preheat a grill or grill pan to medium-high heat.
  2. Season the salmon fillets with salt and pepper, then brush them lightly with olive oil.
  3. In a medium bowl, mix together the avocados, red onion, tomato, jalapeño, lime juice, salt, and pepper.
  4. Place the salmon fillets on the grill and cook for about 3-4 minutes on each side, until the fish is opaque and flaky.
  5. Serve the salmon with a dollop of avocado salsa on top.

Dessert: Berry Sorbet Ingredients:

  • 3 cups of mixed berries (strawberries, raspberries, blackberries, etc.), fresh or frozen
  • 1/2 cup of sugar
  • 1/2 cup of water
  • 1 tbsp of freshly squeezed lemon juice
  • Salt to taste

Instructions:

  1. In a saucepan, combine the sugar and water. Cook over medium heat, stirring occasionally, until the sugar is completely dissolved.
  2. In a blender or food processor, puree the mixed berries, lemon juice, and salt until smooth.
  3. Stir the puree into the sugar syrup, then transfer the mixture to a container and freeze for at least 2 hours.
  4. Scoop the sorbet into serving dishes and serve immediately.
