Grilled Lemon Herb Salmon with Roasted Winter Vegetables

Ingredients:

  • 4 salmon fillets
  • 2 lemons
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper, to taste

For the roasted vegetables:

  • 2 cups Brussels sprouts, halved
  • 2 cups butternut squash, peeled and cubed
  • 2 cups cauliflower florets
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and black pepper, to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine the juice of 1 lemon, olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper. Stir well.
  3. Place the salmon fillets in a shallow dish and pour the marinade over them. Let the salmon marinate for about 15-20 minutes while you prepare the vegetables.
  4. In a large bowl, combine the Brussels sprouts, butternut squash, cauliflower florets, and red onion. Drizzle with olive oil, sprinkle with paprika, salt, and black pepper. Toss well to coat the vegetables evenly.
  5. Transfer the vegetables to a baking sheet lined with parchment paper and spread them out in a single layer.
  6. Place the baking sheet in the preheated oven and roast for 25-30 minutes or until the vegetables are tender and lightly browned, stirring once halfway through.
  7. While the vegetables are roasting, preheat a grill pan or skillet over medium-high heat. Remove the salmon fillets from the marinade and place them on the hot grill pan. Cook for about 4-5 minutes on each side or until the salmon is cooked through and has a nice grill marks.
  8. Remove the salmon from the grill pan and squeeze fresh lemon juice over the top.
  9. Serve the grilled lemon herb salmon with the roasted winter vegetables. Garnish with fresh herbs if desired.
